Part of Chicago Cutlery's well-known Walnut Tradition line, this paring/boning knife is notable for its patented Taper Grind edge, which stays exceptionally sharp. The blade is made of rust-resistant, high-carbon stainless steel, and is complemented by an ergonomic, triple-riveted handle comprised of solid walnut. Best Paring knife ever
We have been using these paring knifes for over 40 years. They are great. The only problem that we have is that they seem to grow legs. We have a tendency to loose them.

Favorite knife
I bought this for my Mother as a replacement for her Favorite knife. I was thrilled to find and almost exact duplicate of the one she’s had for decades and used for almost everything! She was equally happy to get this! The original lasted decades and I hope the same for this one. BTW…. Don’t let your significant other put your wooden handled knives through the dishwasher…..a perfect knife will be ruined in no time , lol

Excellent paring knife
I have been using Chicago Cutlery walnut-handled 3-inch boning/paring knives for well over 10 years. The handle fits my hand well. Its unusually narrow blade is excellent for all paring jobs such as cutting out the seed core of fruits and digging out small blemishes. Its narrowness also makes it excellent for trimming the rind from hard cheese or cutting pieces with minimal dragging of the blade in the cheese. The very sharp point helps to cut open a tightly-wrapped package.
I have used these knives every day since I first discovered them. The originals were actually made by Chicago Cutlery in the U.S. Now they are made in China and are a bit longer than the U.S.-made ones were, but they perform equally well. I have had only one blade break since I started using these knives (and I think it was replaced under warranty). I avoid misusing them as screwdrivers or crowbars. I have never had a handle break or develop a crack.
Be careful with the blade of a new knife -- it is exceptionally sharp. After a week or two of use the dangerous edge will become safe to touch, but the knife will retain adequate sharpness indefinitely for all paring jobs.
I need to re-stock every two or three years because these little knives disappear. They are small and can easily get lost with parings or garbage.
