Part of Chicago Cutlery's well-known Walnut Tradition line, this paring/boning knife is notable for its patented Taper Grind edge, which stays exceptionally sharp. The blade is made of rust-resistant, high-carbon stainless steel, and is complemented by an ergonomic, triple-riveted handle comprised of solid walnut. The full-tang assembly extends from the tip of the knife to the end of the handle, adding balance and heft. Made in China, the knife comes covered by a lifetime warranty. Hand washing is recommended

I love Chicago walnut knives
I love Chicago knives. They feel good, cut well, sharpen easily. No no dishwasher but if someone goofs, rub with kitchen oil.

3" Walnut Paring Knife
A replacement for one I broke that was part of a set. 20+ years of excellent use. Easy to sharpen and held an edge well. This new one should outlive me.

do not build them like they use to
I bought this knife to replace the one I lost. The handle is square and uncomfortable to hold. I rounded if off like the original handle came came. It now matches the older5 set That I have. Spend the money and build a nice knife. It can not cost that much to round over the edges on the handle. other than that I love the knife

Great Knives!
I have used the Chicago knives for years for processing meats and vegatables. I probably process between 600 and 800 pounds of meat a year. Although you have to resharpen or touch up the knives somewhat often when doing large processing jobs, the knives are easily kept sharp with a butcher steel. These knives are now assembled in china, but the same steel and materials are used in these knives as when they were made in the USA. I started using Chicago knives back in the 1980,s.
